Potato Cakes

 

2 cups self-raising flour
1/4 cup of milk
2 heaped tablespoons butter
1 1/2 cups mashed potatoes
Caraway Seed (optional)

Makes nine cakes
Mix butter into flour and add a pinch of salt. Then mix in the mashed potato and pour in the milk to make a soft dough. Roll out on a floured board and cut into rounds about 3 inches across. sprinkle a few caraway seeds on top of each cake. Bake in a hot oven for 20 minutes (450°F)/ Eat when hot. Split accross the middle and spread with butter. This dough can also be used to line a savory flat tin.
